These sprawling, open-air food courts are the beating heart of Singaporean culinary culture. However, for a first-time visitor, the sheer chaos, heat, and variety can be overwhelming. Here is how to survive and thrive.

1. The Art of “Choping”

Before you order food, you must secure a table. In Singapore, this is known as “choping.” If you see a table with a packet of tissues, an umbrella, or even a business card resting on it, that table is taken. Do not sit there! Packing Tip: Buy several cheap packets of tissues from a convenience store on your first day. They serve a dual purpose: “choping” your table and providing napkins (which hawker stalls do not provide).

2. Dress for the Heat

Hawker centres are almost entirely open-air and cooled only by large ceiling fans. Given Singapore’s perpetual 30°C (86°F) heat and 80%+ humidity, you will sweat. Leave the designer clothes at the hotel. Wear your lightest, most breathable shorts, a loose-fitting t-shirt or tank top, and comfortable sandals or flip-flops.

3. How to Choose a Stall

With over 100 stalls in popular centres like Maxwell or Lau Pa Sat, choosing what to eat is daunting. The golden rule is simple: Follow the queue. Singaporeans are happy to wait 45 minutes in line for a genuinely good bowl of laksa or chicken rice. If a stall has a long line of locals, the food is guaranteed to be exceptional.

4. Cash is King

While Singapore is highly digitized, many of the older hawker ‘uncles’ and ‘aunties’ who have been running their stalls for decades still prefer cash. Always bring small bills ($2, $5, $10 SGD) and coins. Breaking a $50 bill for a $4 bowl of noodles will not make you popular.
